Culinary Boot Camp

This is a 5 part series (five, 3 hour sessions)

Boot Camp is designed to cover a wide range of culinary techniques, knife skills and ethnic styles and classic recipes. You may either choose the outlined curriculum below, or I would be happy to help you and your group develop a custom series to accommodate special diets, etc. Each session will end with the participants enjoying a meal together.

Session 1 - Foundations and the Well Stocked Freezer

We will start with a review of some key culinary terms which will set the foundation for later sessions. We will prepare stock from scratch, and prepare several other elements which students can keep in their freezer for quick meals..

Session 2 - Protein Power

If you are intimidated by the thought of braising, roasting, basting, trussing, butterflying, and other techniques required for preparing meat, fish and other protein, fear not! We will take the mystery out of some of the most useful preparations to have in your culinary repertoire. We will balance out the evening with some great vegetable sides.

Session 3 - Pastas, Pan Sauces and other Italian Delights

Bring your appetite to this delicious session as we will be preparing everything from a classic, long cooked sauce, to several quick, weeknight friendly pan sauces and everything in between. Pair these with a super quick and easy homemade 'pasta', and learn to make the perfect risotto too!

Session 4 - Kicked up Comfort Food

With today's healthy lifestyles, most people think they can't enjoy meatloaf, mac n' cheese and mashed potatoes, etc. But, think again! You will learn some great tricks to turn some of your favorite comfort foods into meals that you can enjoy anytime without guilt.

Session 5 - Savoring the Southwest

We will be preparing a Mexican feast for our grand Finale. Each participant may invite a spouse, friend, or significant other to join us at the end of class to enjoy the fruits of our labor. (note: if you and your group would prefer, we can substitute a different ethnic cuisine of your choice)
